Ingredients

Main Ingredients
  • 4 pieces chicken breasts, about 1 inch thick
  • 2 tablespoons oil (avocado oil or canola) Oil with a higher smoke point
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Optional Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon lemon zest

Method

Preparation
  1. Pat the chicken dry with paper towels to help it brown instead of steam.
  2. Season the chicken well with salt and pepper on both sides, adding optional seasonings if desired.
  3. Let the chicken sit out for 10 to 15 minutes before cooking to come to room temperature.
Cooking
  1. Heat the skillet over medium heat and add a thin layer of oil. When the oil is shimmering, place the chicken in the skillet.
  2. Cook the first side for about 5 to 7 minutes without moving. When golden brown, flip the chicken.
  3. Lower the heat to medium-low, add a splash of water or broth, cover the skillet, and cook until the chicken reaches 165°F (about 5 to 8 more minutes).
Resting
  1. Remove the chicken from the skillet and place it on a plate. Let it rest for 5 minutes before slicing to allow juices to redistribute.

Notes

You can cut chicken breasts in half horizontally for quicker cooking. Serve the chicken with rice, roasted potatoes, or a salad for a complete meal.
