Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together peanut butter, softened butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture until fully combined.
- Chill the dough in the refrigerator for 20 to 30 minutes if your kitchen is warm.
Baking
- Scoop about 1 tablespoon of dough for each cookie and roll into balls, then coat in sugar.
- Place the dough balls on a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set but the centers are still soft.
- Remove from the oven and immediately press a chocolate kiss gently into the center of each cookie.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 5 days. For longer storage, freeze baked cookies for up to 2 months. Microwave individual cookies for 8-10 seconds to warm before serving.
