  • 2 lbs Wildschwein, gewürfelt Wild boar, diced
  • 2 pieces Zwiebeln, gehackt Onions, chopped
  • 2 pieces Karotten, in Scheiben geschnitten Carrots, sliced
  • 2 tablespoons Tomatenmark Tomato paste
  • 1 cup Rotwein Red wine
  • 2 cups Rinderbrühe Beef broth
  • 2 teaspoons Paprika Paprika
  • 2 pieces Lorbeerblätter Bay leaves
  • to taste Salz und Pfeffer Salt and pepper

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the diced wild boar and sear the meat until golden brown, about 5-7 minutes.
  2. Add chopped onions and sliced carrots. Stir for 3-4 minutes until the onions become translucent.
  3. Mix in the tomato paste and paprika until well-coated.
  4. Pour in the red wine and scrape the bottom of the pot to release any stuck bits. Bring to a boil.
  5. Add the beef broth and bay leaves, stirring to combine. Reduce to a gentle simmer and cover the pot.
  6. Let it cook for about 2 to 2.5 hours, stirring occasionally until the meat is tender.
  7. Taste and adjust with salt and pepper. Remove bay leaves before serving.

Notes

Serve with spätzle or dumplings and freshly made applesauce for a delightful experience. Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months.
