Ingredients
  

For the Filling
  • 6 cups apples, peeled and sliced 1/4 inch thick 5 to 6 medium apples, mix of tart and sweet varieties recommended.
  • 2 tablespoons brown sugar For sweetening the filling.
  • 1-2 teaspoons cinnamon Divided between filling and topping to taste.
  • 1 tablespoon lemon juice To prevent browning of apples.
  • 1 teaspoon vanilla extract For flavor.
  • 1-2 tablespoons flour or cornstarch To thicken the juices.
For the Topping
  • 1 cup old-fashioned oats Not quick oats.
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar Packed.
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter Cut into small cubes.
  • 1/2 cup chopped nuts Pecans or walnuts, optional.

Method
 

Preparation
  1. Heat the oven to 350°F. Lightly butter or spray an 8-inch square or 9-inch round baking dish.
  2. In a large bowl, toss the sliced apples with lemon juice, vanilla, 2 tablespoons brown sugar, 1 teaspoon cinnamon, and 1 tablespoon flour or cornstarch. Adjust flour or cornstarch based on juiciness of apples.
  3. Spread the apples evenly in the baking dish.
  4. In a second bowl, mix the oats, flour, 1/2 cup brown sugar, salt, and a pinch of cinnamon. Work in the cold butter until clumpy, then stir in nuts if using.
  5. Sprinkle the topping evenly over the apples without packing it tightly.
Baking
  1. Bake for 40 to 45 minutes until the top is golden and the apple juices are bubbling.
  2. Let it rest for 10 to 15 minutes before serving.
Serving
  1. Serve warm with vanilla ice cream, whipped cream, or Greek yogurt.

Notes

Let the crumble cool to room temperature, then cover. It will keep for 1 day on the counter and 3-4 days in the fridge. Reheat in the oven to keep topping crisp.
