- Heat oil in a large skillet over medium heat.
- Season the diced chicken with salt and pepper. Cook in the hot skillet until golden brown, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In a bowl, whisk together pineapple juice, soy sauce, honey, cornstarch, minced garlic, and grated ginger until smooth.
- Add pineapple chunks to the skillet and cook for about 2-3 minutes until they caramelize slightly.
- Pour the sauce over the pineapple and let it simmer until thickened, about 3-4 minutes.
- Return the chicken to the skillet and toss to coat in the sauce.
- Serve the mixture over warm cooked rice and garnish with green onions or sesame seeds.
Notes
Store leftovers in an airtight container for up to 4 days, or freeze for about 3 months. To reheat, add a splash of water for moisture.
