  • 1 lb ground beef High-quality ground beef is recommended.
  • 1 lb ground pork Ground pork adds flavor and moisture.
  • 1 onion diced and caramelized Caramelizing the onion enhances the sweetness.
  • 2 slices stale bread Soaked in milk; consider gluten-free alternatives if needed.
  • 2 large eggs Acts as a binder.
  • 2 cloves garlic, minced Adds flavor.
  • 1 tsp salt
  • ½ tsp pepper
Glaze Ingredients
  • ¼ cup ketchup Choose low-sugar for a lighter version.
  • 2 tbsp brown sugar
  • 1 tsp Worcestershire sauce

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat, add the diced onions, and caramelize until golden brown, about 10 minutes.
  3. Soak the stale bread in a bowl covered with milk for about 5 minutes.
  4. In a large bowl, mix ground beef, ground pork, caramelized onions, soaked bread, eggs, minced garlic, salt, and pepper. Avoid overmixing.
  5. Shape the mixture into a loaf and place it in a loaf pan.
  6. In a small bowl, mix ketchup, brown sugar, and Worcestershire sauce. Spread this glaze over the meatloaf.
  7. Bake the loaf in the preheated oven for 60-70 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the microwave or oven.
