Ingredients
  

For the cookie cups
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the filling
  • 1/2 cup strong brewed coffee, cooled
  • 8 ounces mascarpone cheese, cold
  • 1/2 cup heavy cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder, for dusting

Method
 

Preparation
  1. Preheat the oven to 350°F and grease a 12-cup muffin tin very well.
  2. Whisk the flour, baking powder, and salt in a small bowl.
  3. Cream the butter and sugar until pale and fluffy. Beat in the egg and vanilla until combined.
  4. Mix in the dry ingredients just until a dough forms. Do not overmix.
  5. Divide dough into 12 balls and press each into the muffin cups, pushing up the sides to make little bowls.
  6. Bake for 9 to 11 minutes until edges are set and lightly golden. Cool 5 minutes in the pan, then gently loosen with a butter knife and move to a rack.
  7. Brush or lightly spoon the cooled coffee inside each cookie cup. Let the cups sit for 5 minutes to absorb the coffee.
Filling
  1. Beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy and soft peaks form. Do not overbeat.
  2. Pipe or spoon filling into the cups. Dust with cocoa.
  3. Chill for 15 minutes before serving or up to 4 hours.

Notes

Keep the mascarpone cold to avoid graininess. Chill filled cups for neat swirls that resemble bakery quality. Can customize with items like chopped pistachios or chocolate-covered espresso beans for added flavor.
