Preparation
- Preheat the oven to 350°F and grease a 12-cup muffin tin very well.
- Whisk the flour, baking powder, and salt in a small bowl.
- Cream the butter and sugar until pale and fluffy. Beat in the egg and vanilla until combined.
- Mix in the dry ingredients just until a dough forms. Do not overmix.
- Divide dough into 12 balls and press each into the muffin cups, pushing up the sides to make little bowls.
- Bake for 9 to 11 minutes until edges are set and lightly golden. Cool 5 minutes in the pan, then gently loosen with a butter knife and move to a rack.
- Brush or lightly spoon the cooled coffee inside each cookie cup. Let the cups sit for 5 minutes to absorb the coffee.
Filling
- Beat mascarpone, heavy cream, powdered sugar, and vanilla until fluffy and soft peaks form. Do not overbeat.
- Pipe or spoon filling into the cups. Dust with cocoa.
- Chill for 15 minutes before serving or up to 4 hours.
Notes
Keep the mascarpone cold to avoid graininess. Chill filled cups for neat swirls that resemble bakery quality. Can customize with items like chopped pistachios or chocolate-covered espresso beans for added flavor.
