Main Ingredients
  • 4 filets salmon filets, skinless or skin-on Choose center-cut for even cooking.
  • 2 cups jasmine rice Microwavable or leftover is great.
  • 1/4 cup soy sauce Regular or low sodium works.
  • 1-2 tablespoons honey Brown sugar can be used instead.
  • 1 tablespoon rice vinegar or lime juice To brighten the sauce flavor.
  • 2 cloves garlic, minced Fresh is best, jar versions are fine.
  • 1 teaspoon grated ginger Adjust according to preference.
  • 1 teaspoon cornstarch (optional) For a thicker glaze.
  • 1 tablespoon water (optional for cornstarch) To mix with cornstarch.
Vegetables and Toppings
  • 1 cup cucumber, sliced For freshness.
  • 1 cup shredded carrots Crunchy texture.
  • 1 avocado sliced For creaminess.
  • 1 cup edamame For protein.
  • 2 tablespoons sesame seeds For garnish.
  • 2 scallions sliced, for garnish Adds a fresh touch.

Method
 

Preparation
  1. Get the rice going first. For leftover rice, reheat it with a splash of water. For microwavable rice, start it as the salmon cooks.
  2. In a small bowl, mix together soy sauce, honey, rice vinegar or lime juice, garlic, grated ginger, and optionally, the cornstarch mixture.
Cooking
  1. Pat the salmon dry and season with salt and pepper. Heat a nonstick skillet over medium-high heat with a little oil.
  2. Add the salmon and cook for about 3 to 4 minutes per side until cooked through but still juicy.
  3. Reduce heat to medium and pour in the sauce, cooking for 30 to 60 seconds until it thickens, spooning it over the salmon.
Assembly
  1. In each bowl, add rice, top with salmon, then pile on chopped veggies. Drizzle with extra sauce and finish with sesame seeds and green onion.

Notes

Use thinner salmon fillets for quicker cooking. Keep vegetables fresh by storing them separately if meal prepping.
