Ingredients
  

Main ingredients
  • 2 medium Granny Smith apples, peeled and sliced Use tart apples to balance the sweetness.
  • 3 whole Eggs
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 1/3 cup Brown sugar, light packed Used in the batter and topping.
  • 1 tsp Cinnamon Adds flavor to the cake.
  • 2 3/4 cups Flour
  • 1 1/2 cups Granulated sugar
  • 3/4 tsp Salt
  • 2 tsp Vanilla extract
  • 1 cup Pecans, chopped Can substitute with walnuts.
  • 2 tbsp Apple cider
  • 1 1/8 cup Butter, unsalted, diced or softened Diced butter blends better.
  • 1 cup Sour cream
Topping
  • 1 cup Pecans, chopped Mix with a little brown sugar before sprinkling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Peel and slice the Granny Smith apples and set them aside.
  3. In a bowl, whisk eggs, brown sugar, granulated sugar, vanilla extract, and apple cider until smooth.
  4. In another bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry mix to the wet mix and stir until just combined.
  6. Fold in sour cream, diced butter, and diced apples until evenly mixed.
  7. Pour the batter into the prepared pan.
  8. In a small bowl, mix pecans with a little brown sugar and sprinkle over the top.
Baking
  1. Bake for 40–50 minutes or until a toothpick comes out clean.
  2. Let cool, slice, and serve warm or at room temperature.

Notes

Serve warm for best flavor. Add vanilla ice cream or whipped cream for extra sweetness.
