Ingredients

For the cake base
  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup softened butter
For the streusel topping
  • 1 cup all purpose flour
  • 1/2 cup granulated sugar or a mix of white and brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold butter
Optional ingredients
  • 1 tbsp lemon zest for brightness
  • 1/2 cup jam for a thin layer under the crumbs

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch pan or line it with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, salt, and sugar for the cake base. Beat in the softened butter, eggs, milk, and vanilla until smooth. Pour the batter into the prepared pan and level it out.
  3. For the streusel topping, mix together the flour, sugar, cinnamon, and salt in a bowl. Cut in the cold butter with your fingers until it resembles clumps and crumbs.
  4. Sprinkle the streusel topping evenly over the cake batter, covering it generously.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until the top is golden and a toothpick comes out mostly clean from the cake layer.
  2. Once baked, allow it to cool before slicing. If using fruit or jam, refrigerate for better storage.

Notes

This cake is best after a few hours as the topping settles. Store at room temperature for up to 2 days or refrigerate for 4-5 days if fruit is added. Freeze in slices for up to 2 months.
