Method
Marination
- In a bowl, combine chicken chunks with olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Toss until well-coated and let marinate for at least 30 minutes.
Grilling the Chicken
- Thread marinated chicken onto skewers, preheat the grill to medium-high heat, and grill skewers for 10–12 minutes, turning occasionally. Brush with honey and BBQ sauce in the last few minutes.
Cooking Rice and Fries
- In a saucepan, bring water with 1/4 tsp salt to a boil. Add rice, reduce heat, and let simmer until fluffy. Mix in chopped parsley and red onion.
- For fries, toss potatoes with vegetable oil and 1 tsp salt, then bake or air-fry at 425°F (220°C) until golden and crispy.
Preparing the Fresh Salad
- Layer romaine lettuce, cucumber slices, and cherry tomatoes in a bowl.
Assembling
- In a large bowl, layer rice, crispy fries, fresh salad, and top with chicken skewers. Serve with ketchup and garlic herb mayo on the side.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, place components separately to maintain texture.
