Ingredients

Main Ingredients
  • 2 cups all-purpose flour Simple and reliable flour.
  • 1 teaspoon salt Essential for flavor.
  • 4 large eggs Bring richness and structure.
  • 3/4 cup milk or water Use milk for a softer bite.
  • 1 pinch nutmeg Optional for flavor.

Method

Preparation
  1. In a large bowl, whisk together the flour and salt.
  2. Add the eggs and about 3/4 cup milk (or water). Stir until you have a thick, sticky batter.
  3. Stir vigorously for 1 to 2 minutes until smooth and stretchy.
  4. Let the batter rest for 10 minutes while bringing a large pot of salted water to a gentle boil.
Cooking
  1. Reduce the water to a simmer. Push batter through a spaetzle maker, colander, or slotted spoon into the water.
  2. Cook until the spaetzle float to the surface, about 1 to 3 minutes, then let them cook an additional 30 seconds.
  3. Remove with a slotted spoon and place in a bowl.
  4. Toss the cooked spaetzle with butter, or pan fry for crispy edges.

Notes

If batter is too thick, add a splash of milk; if too thin, add more flour. Spaetzle can be served with butter, gravy, cheese, or alongside meats.
