Ingredients
  

For the Batter
  • 1 cup sweet corn, kernels Fresh corn for optimal sweetness.
  • 2 large eggs
  • 1 cup all-purpose flour Can substitute gluten-free flour.
  • 1 tablespoon baking powder For leavening.
  • 1 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter Melted butter for richness.
  • 1 cup buttermilk Can substitute non-dairy milk.
  • 1/2 cup cheddar cheese Sharp cheddar recommended.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a large mixing bowl, sift together the cornmeal, flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk together the eggs, buttermilk, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and stir gently until combined.
  6. Fold in the sweet corn and cheddar cheese.
  7. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 15-20 minutes until golden brown, and a toothpick inserted in the center comes out clean.
  2. Let cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For additional sweetness, add a tablespoon of honey to the batter. Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
