Preparation
  1. In a large pot, melt the butter with olive oil over medium heat.
  2. Add the sliced onions and sugar, cooking while stirring frequently until the onions are caramelized and golden brown, which will take about 30 minutes.
  3. Pour in the dry white wine and let it simmer for about 10 minutes, allowing the liquid to reduce and thicken slightly.
  4. Add the beef broth and thyme to the pot, then season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for an additional 30 minutes.
  6. Preheat your broiler and ladle the soup into oven-safe bowls.
  7. Top each bowl with a slice of baguette and a generous amount of Gruyère cheese.
  8. Broil the bowls until the cheese is bubbly and golden brown, keeping a close eye to prevent burning.
