Cookie Base
  • 1 cup unsalted butter, softened Choose high-quality butter for best flavor.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tablespoons lemon zest Freshly grated lemon zest will provide the best flavor.
  • 3 tablespoons lemon juice Fresh lemon juice is recommended.
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • to taste powdered sugar for dusting (optional) Add for extra sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs, lemon zest, lemon juice, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mix, stirring until just combined.
  6. Drop tablespoon-sized portions of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  3. Dust with powdered sugar if desired before serving.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. For enhanced flavor, consider chilling the dough for 30 minutes before baking.
