Preparation
- Pat chops dry. Season both sides with salt, pepper, and paprika.
- Heat oil and 1 tablespoon butter over medium-high. Sear chops for 2 to 3 minutes per side until browned and then transfer to a plate.
- Lower heat to medium. Add remaining butter and sliced onions with a pinch of salt. Cook for 8 to 10 minutes until soft and golden. Stir in minced garlic for 30 seconds.
- Sprinkle flour over onions and stir for 1 minute to cook out the raw flour taste.
- Slowly whisk in the chicken broth. Add Worcestershire sauce if using. Simmer until the gravy thickens and becomes glossy.
Cooking
- Nestle the seared pork chops back into the skillet with the gravy. Cover loosely and simmer on medium-low for 7 to 12 minutes, depending on thickness, until the chops reach an internal temperature of 145°F.
- Taste and adjust salt and pepper as necessary. If desired, add a splash of cream for a richer gravy. Garnish with chopped parsley before serving.
Notes
Rest the chops for 5 minutes before serving to settle the juices for a better bite. Can be served with mashed potatoes, rice, buttered noodles, or sautéed vegetables.
