  • 2 fillets salmon fillets, cut into cubes Look for firm, bright salmon fillets with no brown spots.
  • 1 piece avocado, sliced and cubed Choose a fresh avocado that feels slightly soft yet firm.
  • 2 pieces boiled eggs, halved Optional: use pre-cooked boiled eggs for convenience.
  • 1 cup mushrooms, sliced Sauté until browned and juicy.
  • 2 cups arugula Base for the bowl; can substitute with spinach if preferred.
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil Heat until shimmering before cooking salmon.
  • 1 tsp garlic powder For seasoning salmon.
  • Salt and black pepper to taste
  • Fresh parsley, chopped For garnish.
  • Optional: lemon juice or balsamic glaze For extra flavor.

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Season the salmon cubes with garlic powder, salt, and pepper. Cook for 3–4 minutes per side until golden brown.
  3. In the same pan, add sliced mushrooms and sauté until browned, about 5 minutes.
  4. While the mushrooms cook, slice the avocado, halve the boiled eggs, and prep the cherry tomatoes.
  5. Assemble the bowl starting with arugula as the base, layering salmon, mushrooms, avocado, eggs, and tomatoes on top.
  6. Drizzle with lemon juice or balsamic glaze, sprinkle with parsley, and serve immediately.

Notes

Storage: Store in an airtight container in the fridge for up to three days. Optionally freeze in a safe container for up to two months.
