  • 1 cup broccoli florets
  • 1 piece carrot, sliced
  • 1/2 cup mushrooms, sliced
Condiments and Spices
  • 2 tablespoons soy sauce Use tamari for gluten-free option.
  • 3 tablespoons butter Ghee can be used for a richer flavor.
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced Adjust for more flavor if desired.
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup creamy yum yum sauce Drizzle before serving for added flavor.
Rice
  • 3 cups cooked rice Day-old rice is ideal for texture.

Method

Preparation
  1. Heat 1 tablespoon of butter in a large skillet over medium heat. Pour in the beaten eggs, allowing them to set but remain soft. Stir gently and remove them from the skillet before they get too firm.
  2. In the same skillet, add 2 cups of cooked rice and the soy sauce. Stir over medium heat until warm, letting the rice soak up the sauce.
  3. Add the sliced zucchini, broccoli, carrots, and mushrooms to the skillet and sauté for about 4-5 minutes until tender-crisp.
  4. In another pan, heat 1 tablespoon of olive oil over medium-high heat. Season cubed beef with paprika, onion powder, salt, and pepper. Sear until browned on all sides.
  5. Wipe the skillet clean and melt the remaining butter. Add minced garlic and sauté until fragrant, then add the shrimp. Cook until golden and opaque.
  6. Plate the fried rice and arrange sautéed vegetables, seared steak, and shrimp on top. Drizzle with creamy yum yum sauce before serving.

Notes

For added flavor, you can include a splash of oyster sauce. To make it lighter, consider using chicken or cauliflower rice.
