Ingredients
  

For the Chicken Rolls
  • 4 pieces boneless, skinless chicken breasts Look for plump, bright pink chicken breasts.
  • 1 cup feta cheese, crumbled Use high-quality feta for the best flavor.
  • 2 cups fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped Marinated sun-dried tomatoes can enhance flavor.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine feta, chopped spinach, and sun-dried tomatoes.
  3. Using a meat mallet, flatten each chicken breast to about 1/2 inch thick.
  4. Sprinkle the breasts with garlic powder, salt, and pepper.
  5. Place a generous scoop of the feta-spinach mixture on each breast, then roll tightly and secure with toothpicks or kitchen twine.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear the rolls for about 2-3 minutes on each side.
  2. Transfer the rolls to a baking dish and bake in the preheated oven for 25-30 minutes until fully cooked.
  3. Let the rolls rest for a few minutes before slicing and serving warm.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15-20 minutes.
