  • 8 oz pasta (spaghetti, penne, or your choice) Choose according to preference.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Use fresh garlic for best flavor.
  • 14 oz canned diced tomatoes You can substitute with crushed or fresh tomatoes.
  • Salt and pepper to taste Adjust according to preference.
  • Fresh basil or parsley for garnish For extra flavor and presentation.
  • Parmesan cheese (optional) Use dairy-free cheese if avoiding dairy.

Method
 

Cooking the Pasta
  1. Bring a pot of salted water to a boil, then add your pasta. Follow package instructions to achieve a tender yet firm texture. Avoid overcooking.
Cooking the Sauce
  1. In a large skillet, warm the olive oil over medium heat until it shimmers slightly. Be careful not to let it smoke.
  2. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant and golden. Watch it closely to avoid burning.
  3. Pour in the canned diced tomatoes and season with salt and pepper. Let the mixture simmer for 5-7 minutes, stirring occasionally.
Combining and Serving
  1. Drain the pasta and toss it into the skillet with the sauce, mixing well to coat.
  2. Plate the pasta hot, garnishing with fresh herbs and grated Parmesan if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, use a freezer bag and enjoy within 2 months.
