  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated Use freshly grated ginger for best flavor.
  • 4 cups vegetable or chicken broth For a vegan option, ensure the broth is vegetable-based.
  • 1 cup coconut milk For a lighter version, you can use unsweetened almond milk.

Method
 

Preparation
  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing for about 5 minutes until soft and fragrant, being careful not to let the garlic brown.
Cooking
  1. Add the grated ginger and chopped pumpkin, stirring together and cooking for 3 to 4 minutes until pumpkin begins to soften.
  2. Pour in the vegetable or chicken broth, bring to boil, then reduce heat to simmer for about 20 minutes or until pumpkin is tender.
  3. Use an immersion blender to puree the soup until smooth and creamy or transfer in batches to a blender and return to pot.
  4. Stir in the coconut milk and season with salt and pepper. Cook for another 5 minutes over low heat to warm through.
Serving
  1. Serve hot, garnished with pumpkin seeds or fresh herbs.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. For freezing, portion into freezer-safe containers for up to 3 months. Reheat gently on the stove, adding broth or coconut milk for consistency. Consider roasting the pumpkin beforehand for enhanced sweetness.
