Method
Before you start
- Preheat your oven to 350°F and line an 8x8 inch baking pan with parchment paper, leaving flaps for easy removal.
- Gather a medium mixing bowl, sturdy spatula, and measuring cup.
- If using natural peanut butter, stir well before measuring. Let the egg sit at room temperature for better mixing.
Mix and bake
- In the mixing bowl, cream together the softened butter, creamy peanut butter, and packed brown sugar until smooth.
- Stir in the egg and vanilla extract until the mixture is glossy.
- Sprinkle flour, baking soda, and salt over the mixture and fold gently until no dry bits remain.
- Fold in the chocolate chips, mixing until just combined.
- Press the dough evenly into the lined baking pan and scatter extra chocolate chips on top.
- Bake for 22 to 26 minutes until the edges are set and the center looks slightly glossy.
- Cool in the pan for at least 30 minutes before lifting out and slicing.
Notes
Keep the bars gooey by pulling them out just before fully baked. Allow them to cool for neat slicing and the best texture. They can be stored at room temperature for 3 days in an airtight container.
