Preparation
- Heat a big skillet over medium heat. Add butter or oil, then toss in the sliced onion. Cook for about 3 to 4 minutes until it softens.
- Add the pierogies in a single layer. Let them sit and get a little golden on the bottom. Flip and do the other side.
- Add a splash of water or broth and cover the skillet for 2 to 3 minutes. This helps heat the pierogies through.
- Stir in garlic and bell peppers if using. Cook for 1 minute until garlic smells amazing.
- Add meatballs, cutting large ones in half for even cooking.
- Pour in the sauce, sprinkle in seasoning, and let it simmer for 5 to 7 minutes until hot and bubbly.
- Add cheese on top, cover again, and wait 2 minutes until melted. Serve directly from the pan.
Notes
For crispy tops, broil for a minute or two at the end of cooking. Reheat leftovers in a skillet with a bit of water for best texture.
