  • 2-4 pieces Chicken breasts Depending on how many you are feeding
  • to taste Salt and black pepper
  • as needed tablespoons All purpose flour For a light coating
  • 3 tablespoons Butter Real butter for best flavor
  • 1 tablespoon Olive oil To help the butter not burn fast
  • 4 cloves Garlic, minced Do not be shy with the garlic
  • 1 cup Chicken broth or stock
  • 1 tablespoon Lemon juice A squeeze to wake up the flavors
  • as needed Parsley Optional, for garnish

Method
 

Preparation
  1. Pat the chicken dry with paper towels to help the coating stick and give a better sear.
  2. Season both sides of the chicken with salt and pepper.
  3. Put flour on a plate and lightly coat the chicken, shaking off any extra flour.
  4. Heat a large skillet over medium heat. Add olive oil and butter.
  5. Once the butter melts and starts to bubble, add the chicken. Cook for about 4 to 6 minutes per side until golden and cooked through, checking with a thermometer to ensure it reaches 165°F.
  6. Move the cooked chicken to a plate and cover loosely to keep warm.
  7. In the same skillet, add another small pat of butter if the pan looks dry, then add garlic and stir for about 30 seconds, ensuring it does not burn.
  8. Pour in the chicken broth and scrape up the browned bits from the bottom, simmering for a couple of minutes to reduce slightly.
  9. Add a squeeze of lemon juice and taste the sauce, adjusting with more salt or a bit of butter if desired.
  10. Put the chicken back in the pan, spoon the sauce over it, and let it sit for a minute to combine flavors.
  11. Sprinkle with parsley if desired before serving.

Notes

Serve with mashed potatoes, rice, pasta, or roasted broccoli/green beans to catch the delicious sauce. For lighter variants, reduce butter and increase broth.
