Ingredients

Main Ingredients
  • 1 lb Ground beef Lean is preferred, but use what you have
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning Store bought or homemade
  • 3 cups Cooked rice Alternatively, uncooked rice can be used with additional liquid
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Salsa or diced tomatoes with green chiles
  • 2 cups Shredded cheese Cheddar, Monterey Jack, or a mix
  • 1 cup Broth To keep the casserole juicy
Optional Toppings
  • 1 cup Sour cream For serving
  • 1 bunch Cilantro, chopped For garnish
  • 1 to taste Jalapenos, sliced For a spicy kick
  • 1 cup Crushed tortilla chips For topping, optional

Method

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch casserole dish.
  2. In a skillet, brown the ground beef with chopped onion over medium heat. When the beef is mostly cooked, add minced garlic and cook for about 30 seconds.
  3. Stir in the taco seasoning, salsa (or diced tomatoes), black beans, corn, and cooked rice. Add broth if the mixture looks too thick.
  4. Transfer the beef mixture into the prepared casserole dish and top generously with shredded cheese.
Baking
  1. Bake for 20 to 25 minutes until bubbly. For an extra golden top, broil for 1 to 2 minutes, watching closely to avoid burning.
  2. Let it sit for 5 minutes before serving to make it easier to scoop.

Notes

This dish can be assembled ahead of time and refrigerated for up to a day. Add 5 to 10 minutes to baking time if cold from the fridge. It can also be frozen for up to 2 months; just thaw overnight in the fridge before baking.
