Preparation
- Peel the potatoes, or leave some skin for a rustic vibe, then cut into evenly sized chunks.
- Put the potatoes in a big pot and cover with cold water by about an inch. Add the salt.
Cooking
- Bring to a boil, then lower to a steady simmer. Cook for 15 to 20 minutes, until a fork slides in easily.
- Drain well, then put the potatoes back in the pot and turn the heat to low for about 30 seconds, stirring gently.
- Add butter first and let it melt. Then mash the potatoes.
- Pour in warm milk a little at a time, stirring and tasting as you go, until creamy and soft.
- Season with salt and pepper, and stir in cream cheese at the end if using.
Notes
For best results, start potatoes in cold water and avoid over-mixing to prevent gluey texture. Store leftovers in an airtight container for up to 4 days in the fridge, or freeze for up to 1 month.
