Ingredients

Main ingredients
  • 2 cups blanched almond flour (or very finely ground blanched almonds) Ensure it's fresh for best flavor.
  • 1 3/4 cups powdered sugar, plus a little extra for dusting Use more if needed to prevent stickiness.
  • 1 to 2 teaspoons almond extract, optional but delicious Adds a lovely almond aroma.
  • 1 teaspoon rosewater, optional (use lightly) Use for a floral note if desired.
  • 1 large egg white pasteurized if you prefer Can also use 2 to 3 tablespoons corn syrup for egg-free.
  • 1 to 2 tablespoons water Only if needed to bring the mixture together.
  • 1 pinch salt Enhances flavor.

Method

Preparation
  1. Add almond flour, powdered sugar, and salt to a food processor. Pulse a few times to mix and break up clumps.
  2. Add almond extract and rosewater if using, then add egg white or corn syrup.
  3. Pulse until it starts looking like damp sand and forms bigger clumps. If it looks dusty and refuses to come together, add a tiny splash of water, 1 teaspoon at a time.
  4. Dump the mixture onto a clean counter dusted with powdered sugar. Knead for about 30 to 60 seconds until smooth.
  5. Wrap tightly in plastic wrap and chill for at least 30 minutes before shaping.

Notes

Store wrapped tightly in the fridge for up to 2 weeks or freeze for up to 3 months. You can customize the marzipan with flavors like cocoa powder for chocolate marzipan, pistachio for a twist, or citrus zest for added freshness.
