  • 8 ounces spaghetti Use high-quality spaghetti.
Main Ingredients
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for richer flavor.
  • 1 can cream of mushroom soup Opt for a good brand for best flavor.
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth Add more if the sauce is too thick.
  • 1 cup grated cheddar cheese
  • 1/2 cup sour cream Can be substituted with coconut cream for a vegan option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • for garnish Chopped parsley Enhances visual appeal.

Method
 

Cook the Spaghetti
  1. Boil a large pot of salted water. Add spaghetti and cook according to package instructions, about 8 to 10 minutes. Drain and set aside.
Prepare the Sauce Mixture
  1. In a large bowl, combine the shredded chicken, cream of mushroom soup, diced tomatoes, chicken broth, cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until creamy and rich, avoiding lumps.
Combine with Spaghetti
  1. Gently fold the cooked spaghetti into the sauce mixture until every strand is coated. Add more chicken broth if necessary to achieve a creamy consistency.
Transfer and Bake
  1. Pour the combined mixture into a greased baking dish. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until bubbly and golden on top.
Garnish Before Serving
  1. Remove from the oven and let cool for a few minutes. Sprinkle chopped parsley on top for a fresh finish.

Notes

Store in an airtight container for up to 4 days in the fridge. Freeze in a freezer-safe container for up to 3 months. Reheat at 350°F until heated through.
