Ingredients
  

For the crust
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
For the filling
  • 3 packages cream cheese, softened Use room-temperature for best results.
  • 1 cup granulated sugar
  • 3 large eggs Add one at a time.
  • 1 teaspoon pure vanilla extract
For the topping
  • 1 cup caramel sauce Store-bought is fine.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. Grease a 9-inch springform pan.
  3. In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed.
  4. Press the mixture into the bottom of the prepared springform pan to form the crust.
Making the filling
  1. In another bowl, beat the cream cheese until smooth and creamy.
  2. Gradually add the granulated sugar and beat until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Then add the vanilla extract and mix until smooth.
Baking
  1. Pour the cream cheese mixture over the crust in the springform pan.
  2. Bake in the preheated oven for about 55-60 minutes or until the center is set and the edges are slightly puffed.
  3. Remove from the oven and let it cool.
Chilling
  1. Once cooled, refrigerate for at least 4 hours or overnight.
Serving
  1. Before serving, drizzle the caramel sauce over the top of the cheesecake.
  2. Let the cheesecake sit at room temperature for 10–15 minutes before slicing.
  3. Cut with a hot, clean knife for neat slices.
  4. Serve plain or add a small spoon of extra caramel or a few salted nuts on top for crunch.

Notes

For best results, use room-temperature cream cheese for a smooth batter. Beat the cream cheese until fully smooth before adding sugar. Don’t overbake; the center should be mostly set but slightly jiggly. Chill the cheesecake fully before slicing for clean cuts.
