Preparation and Roasting
- Preheat your oven to 425°F (220°C) to ensure crispy potatoes.
- Dice the potatoes into uniform 1-inch squares, then toss them in a bowl with olive oil and taco seasoning until well coated.
- Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 25-30 minutes, tossing halfway through.
Topping Preparation
- While the potatoes are roasting, rinse and drain the black beans, chop the tomatoes, and shred the lettuce for the toppings.
Assembly
- In a serving bowl, layer the roasted potatoes as a base, followed by black beans, corn, cheese, and your choice of toppings.
- Sprinkle crushed tortilla chips or Fritos on top for added crunch before serving.
Notes
Serve fresh from the oven, with options for guacamole or salsa. Store leftovers in an airtight container for up to 3 days. To reheat, bake at 350°F (175°C).
