Preparation
  1. In a large pot, combine the diced potatoes, onion, celery, and carrot with the broth. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
  2. Use a potato masher to mash some of the potatoes for a creamier texture, being careful not to over-mash.
Cooking
  1. Stir in the heavy cream, cheese, and cooked bacon. Cook until the cheese has melted into the soup, creating a thick consistency.
  2. Season with salt and pepper to taste, adjusting to your preference.

Notes
