Lamingtons

Lamingtons are soft sponge cake squares dipped in chocolate and rolled in desiccated coconut, creating a delicious and delightful Aussie treat.

Ingredients
  

For the sponge cake
  • 3 large eggs Room temperature for best results.
  • 1 cup sugar Granulated sugar.
  • 1 teaspoon vanilla extract Pure vanilla extract.
  • 1/2 cup milk Can use warm milk for mixing.
  • 1/4 cup butter Melted for mixing into the batter.
  • 1 1/2 cups all-purpose flour Sifted before measuring.
  • 2 teaspoons baking powder Ensure it's fresh for leavening.
  • 1/4 teaspoon salt Enhances flavor.
For the chocolate coating
  • 2 cups powdered sugar Sifted before use.
  • 1/4 cup cocoa powder Unsweetened cocoa powder.
  • 1/4 cup butter Melted for coating.
  • 1/3 cup milk Substitute with hot water if desired.
  • 1/4 teaspoon salt To balance sweetness.
For coating
  • 2 cups desiccated coconut Fine shredding works best.

Method
 

Baking the sponge cake
  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch square pan.
  2. In a mixing bowl, beat eggs and sugar until pale and fluffy.
  3. Stir in vanilla extract.
  4. In a small saucepan, warm butter and milk together until melted, then pour into the egg mixture gently.
  5. Fold in sifted flour, baking powder, and salt until just combined.
  6. Bake for 22-28 minutes, or until a toothpick comes out clean.
Cooling and chilling
  1. Allow cake to cool in the pan for about 10 minutes, then transfer to a rack to cool completely.
  2. Wrap the cake and chill in the fridge for at least 2 hours or overnight.
Cutting and coating
  1. Once chilled, cut the cake into neat squares (about 16 small squares).
  2. Prepare the chocolate coating by mixing together powdered sugar, cocoa powder, and salt.
  3. Add melted butter and sufficient milk to achieve desired coating consistency.
  4. Dip a cake square into the chocolate, drain off excess chocolate, then roll in desiccated coconut until fully coated.
  5. Place coated squares on a rack or parchment to set.
Setting
  1. Let coated lamingtons firm up for 30-60 minutes before serving.

Notes

For best results, keep a clean hand for dipping and use parchment paper in your pan. Lamingtons can be stored in an airtight container in the refrigerator for up to 4 days. They can also be frozen; thaw overnight in the fridge before serving.
