Ingredients
  

For the Bowls
  • 1 lb steak (ribeye, sirloin, flank, or skirt) Sirloin is recommended for being easy and not too pricey.
  • 2 cups rice (jasmine, sushi, or microwave rice) Cook it however you prefer.
  • 4 tbsp soy sauce (low sodium preferred)
  • 2 tbsp brown sugar or honey For sweetness.
  • 2 cloves garlic (minced) Fresh is best.
  • 1 tbsp ginger (minced) Fresh is best.
  • 1 tbsp sesame oil For aroma.
  • 2 tbsp gochujang or sriracha Gochujang tastes more Korean BBQ; sriracha is easier to find.
For the Spicy Cream Sauce
  • 1 cup mayo
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp rice vinegar or lime juice Wakes up the sauce.
  • 1 pinch salt
Toppings
  • 1 cup cucumber (sliced)
  • 1 cup shredded carrots
  • 1/4 cup scallions (sliced)
  • 1 tbsp sesame seeds
  • 1 cup kimchi
  • 1 cup pickled onions
  • 4 each fried eggs Optional for topping.

Method
 

Cooking the Rice
  1. Start the rice first. Cook it however you like: in a rice cooker, pot, or shortcut microwave packets. Keep it warm.
Preparing the Steak
  1. Mix the marinade: soy sauce, brown sugar or honey, minced garlic, ginger, a small splash of sesame oil, and a little gochujang for heat.
  2. Marinate the steak for 15 to 30 minutes. If rushed, even 10 minutes helps.
  3. Cook the steak in a hot pan, usually 2 to 4 minutes per side depending on thickness.
  4. Rest the steak for 5 minutes, then slice thin against the grain.
Making the Spicy Cream Sauce
  1. Stir mayo, sour cream or Greek yogurt, gochujang or sriracha, rice vinegar or lime, and salt. Add a teaspoon of water if too thick.
Building the Bowls
  1. Layer rice, sliced steak, toppings, and drizzle with sauce.

Notes

These bowls are adaptable; you can customize toppings to your liking. For meal prep, keep rice and steak together but store toppings and sauce separately. Reheat with a splash of water for freshness.
