Method

Preparation
  1. Slice the steak thinly. If needed, place it in the freezer for 15-20 minutes to make slicing easier.
  2. In a bowl or zip bag, mix the soy sauce, brown sugar or honey, garlic, ginger, sesame oil, rice vinegar or lime juice, and gochujang or red pepper flakes.
  3. Add the sliced steak to the marinade, mix well, and let it sit for at least 15-30 minutes.
Cooking
  1. Heat a cast iron skillet or any heavy pan over high heat until hot.
  2. Add a little neutral oil to the pan, then spread the marinated steak in a single layer. Cook in batches if necessary.
  3. Cook the steak for about 1-2 minutes per side until browned and glossy from the marinade. Remove from heat and let it rest for a couple of minutes.
Assembly
  1. Start with warm rice as the base in each bowl.
  2. Layer on your cooked steak, followed by the crunchy vegetables.
  3. Top with chopped green onions, sesame seeds, and a fried egg if desired. Serve with any additional sauces.
