Ingredients
  

For the noodles
  • 2 cups all-purpose flour Opt for gluten-free flour if needed.
  • 3 large eggs Using organic eggs enhances creaminess.
  • 1/2 cup milk Non-dairy milk can be used as a substitute.
  • 1 tsp salt
  • 1 pinch nutmeg
  • Water (for boiling)
For the topping
  • 2 cups grated Emmentaler cheese Fresh Emmentaler is recommended for best flavor.
  • 2 large onions, thinly sliced Caramelizing them adds sweetness.
  • 2 tbsp butter
  • Salt and pepper to taste Adjust seasoning according to preference.

Preparation
  1. In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg until smooth. Let the batter rest for 10 minutes.
Cooking the noodles
  1. Bring a pot of salted water to a rolling boil. Using a spaetzle maker or colander, press the batter into the boiling water.
  2. Cook for about 2-3 minutes or until the noodles float to the surface.
  3. Drain the noodles and set them aside.
Caramelizing onions and finishing
  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and caramelize them for about 15 minutes, stirring frequently.
  2. Add the cooked spaetzle to the skillet with the onions, stir in the grated Emmentaler cheese, and let it melt. Season with salt and pepper.

Notes

Serve hot, garnished with extra caramelized onions, fresh chives, or parsley. Pairs well with a crisp salad or roasted vegetables. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
