Ingredients

Dumpling Ingredients
  • 2 pounds starchy potatoes (Russet or Yukon Gold) Use starchy potatoes for fluffy dumplings.
  • 1 teaspoon salt Season the dough well.
  • 1 large egg Helps bind the dumplings.
  • 1/2 cup potato starch or cornstarch For structure.
  • 1 pinch nutmeg Optional but adds classic flavor.
  • 1/2 cup small bread cubes (optional) Toasted in butter for a filling.

Method

Preparation
  1. Peel and cube the starchy potatoes. Boil in salted water until fork-tender.
  2. Mash the potatoes and let them cool to avoid a sticky dough.
  3. Mix the cooled mashed potatoes with the egg, salt, and potato starch until combined.
  4. Shape the mixture into balls, optionally filling with bread cubes for surprise inside.
Cooking
  1. In a pot of gently simmering water, add dumplings, ensuring they have room to float.
  2. Cook the dumplings until they float to the surface, then give an extra couple of minutes.

Notes

Serve hot with gravy or sauce of choice. Reheating dumplings can be done in simmering water to retain texture.
