Ingredients
  

Chicken Marinade
  • 3 pieces boneless skinless chicken breasts Look for plump and shiny breasts.
  • 2 tbsp olive oil For marinating.
  • 3 cloves garlic, minced
  • 1 tsp paprika Consider using smoked paprika for extra flavor.
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • to taste Salt and black pepper
Vegetables & Sides
  • 1 lb baby potatoes, halved
  • 2 pieces carrots, sliced
  • 1 piece red bell pepper, sliced
  • 1 piece cucumber, sliced
  • 2 pieces tomatoes, chopped
  • 1/2 small onion thinly sliced
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped

Method
 

Marinate the Chicken
  1. Combine the chicken breasts with olive oil, garlic, paprika, oregano, parsley, salt, and pepper in a bowl. Let them marinate for at least 20 minutes.
Roast the Potatoes
  1. Preheat your oven to 400°F (200°C). Toss halved baby potatoes with olive oil, salt, and pepper in a baking dish. Roast for 30–35 minutes until golden brown.
Cook the Vegetables
  1. While the potatoes roast, heat a skillet over medium heat. Add sliced carrots and red bell peppers, sautéing until tender, about 5–7 minutes.
Grill the Chicken
  1. Heat a grill pan or skillet over medium-high heat. Cook marinated chicken breasts for 5–7 minutes on each side until golden brown and cooked through.
Prepare and Serve
  1. Mix cucumber, tomatoes, onion, lemon juice, and parsley in a bowl to form a salad. Arrange the salad, roasted potatoes, sautéed vegetables, and chicken on a plate.

Notes

Store leftovers in an airtight container for up to four days. For longer storage, freeze for up to three months. Reheat gently in a skillet.
