Jägerschnitzel

Ingredients
  

For the Schnitzel
  • 4 pieces thin cutlets (pork, veal, or chicken) Pound them thin for even cooking
  • 1 cup all purpose flour For dredging
  • 2 large eggs Beaten for dipping
  • 1.5 to 2 cups breadcrumbs Use fine or lightly seasoned breadcrumbs for crunch
  • 1 tablespoon salt For seasoning
  • 1 tablespoon pepper For seasoning
  • Neutral oil as needed for frying Canola or sunflower recommended
For the Jager Sauce
  • 2 tablespoons butter For sautéing mushrooms
  • 1 small onion, finely chopped
  • 10 to 12 ounces mushrooms, sliced Cremini or button mushrooms recommended
  • 1 to 2 cloves garlic, minced Optional
  • 1.5 cups beef broth Or chicken broth
  • 1 to 2 teaspoons Dijon mustard Optional
  • 1 tablespoon tomato paste Optional
  • 1 to 2 teaspoons paprika Sweet, not smoked
  • 1 to 2 teaspoons Worcestershire sauce Optional
  • 1 to 2 tablespoons cornstarch mixed with cold water For thickening the sauce
  • as needed garnish fresh parsley or chives For finishing

Method
 

Preparation of Sauce
  1. Melt butter in a skillet over medium heat. Add sliced mushrooms and a pinch of salt. Let them sit for a minute or two before stirring to brown.
  2. Stir in the chopped onion and cook until soft. If using garlic, add it for the last 30 seconds.
  3. Stir in tomato paste (if using) and paprika. Cook for about 30 seconds.
  4. Pour in the broth and scrape up any tasty bits from the pan. Add Dijon and Worcestershire if using. Simmer gently.
  5. Mix cornstarch with cold water, then drizzle it into the simmering sauce while stirring. Let it cook for 1 to 2 minutes. Adjust thickness with more broth if necessary.
Preparation of Schnitzel
  1. Set up three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs.
  2. Season the meat with salt and pepper. Dredge in flour, dip in egg, and press into breadcrumbs.
  3. Fry in a skillet with enough oil, heated to medium-high, covering about 1/4 inch up the side of the cutlet.
  4. Cook about 2 to 3 minutes per side until golden brown. Drain on a wire rack or paper towels to keep crisp.

Notes

Serve the sauce on the side to maintain the schnitzel's crispiness. Pairs well with potato-based sides and fresh salads. Keep schnitzel warm in the oven while frying.
