Ingredients
  

For the Chicken
  • 4 pieces bone-in chicken thighs Opt for fresh, organic for best flavor.
  • 2 tbsp olive oil For marinating and roasting.
  • 2 tbsp honey Use wildflower or artisanal for richer flavor.
  • 1 tbsp soy sauce Coconut aminos can be used for a gluten-free option.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 tsp paprika Enhances color and flavor.
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Vegetables and Eggs
  • 2 cups broccoli florets Steam until bright green.
  • 8 pieces baby potatoes Roast until fork-tender.
  • 4 large carrots, peeled For roasting.
  • 2 cups sweet corn kernels Cook until heated through.
  • 4 pieces eggs Boil for 8-9 minutes for best results.

Method
 

Preparation
  1. In a medium bowl, combine olive oil, honey, soy sauce, minced garlic, paprika, salt, and pepper. Whisk until blended.
  2. Coat the chicken thighs in the marinade, ensuring an even covering. Allow to marinate for at least 30 minutes.
Roasting Vegetables
  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking tray with baby potatoes and carrots. Drizzle with olive oil and sprinkle with salt and pepper. Roast until golden brown for 30–35 minutes.
Roasting Chicken
  1. After the vegetables have roasted for 15 minutes, add the marinated chicken thighs to the baking sheet. Roast for 35–40 minutes or until caramelized and cooked through.
  2. Baste the chicken once during cooking for extra flavor.
Cooking Sides
  1. While the chicken and veggies are cooking, steam the broccoli until bright green and tender.
  2. In a separate pot, cook the corn for about 3-4 minutes until heated through.
  3. Boil the eggs for 8–9 minutes until firm, then peel and halve.
Serving
  1. Arrange the roasted chicken thighs alongside the potatoes, carrots, broccoli, sweet corn, and halved eggs. Garnish with fresh parsley.

Notes

For a delightful meal, serve with a light garden salad and a glass of crisp white wine. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
