Ingredients
  

For the Lamb Chops
  • 8 pieces lamb loin chops
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp butter
  • 1 tsp fresh thyme leaves
For the Creamy Mashed Potatoes
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup warm milk
  • to taste salt and pepper
For the Vegetables
  • 2 cups broccoli florets
  • 2 cups butternut squash, cubed
  • 1 tbsp olive oil
  • 1 tsp fresh thyme
  • to taste salt and pepper

Method
 

Prepare the Vegetables
  1. Toss the butternut squash with olive oil, thyme, salt, and pepper. Spread them on a baking sheet and roast at 400°F (200°C) for about 25 minutes.
Steam the Broccoli
  1. While the squash roasts, steam the broccoli until it is tender-crisp, about 4-5 minutes.
Make the Mashed Potatoes
  1. In a large pot, boil the peeled and cubed potatoes until fork-tender, usually around 15-20 minutes. Drain and return them to the pot. Add warm milk and butter, then mash until smooth and creamy.
Cook the Lamb Chops
  1. Season the lamb chops with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat and sear the chops for 3–4 minutes per side.
Prepare the Honey Garlic Glaze
  1. In the same skillet, reduce the heat and melt butter. Sauté garlic until fragrant, then stir in honey, soy sauce, and thyme. Simmer until it thickens slightly.
Assemble and Serve
  1. Spread creamy mashed potatoes onto each plate, placing glazed lamb chops on top, and add roasted butternut squash and steamed broccoli as side dishes.

Notes

For a dairy-free version, use olive oil and non-dairy milk in the mashed potatoes. For gluten-free, substitute soy sauce with tamari. Marinating the lamb chops in the honey garlic mixture beforehand can enhance flavors.
