Preparation
- Pat the chicken dry and season both sides with salt and pepper.
- If the breasts are thick, slice them into cutlets.
- In a small bowl, stir together honey, soy sauce, and vinegar.
- If a thicker sauce is desired, dissolve about 1 teaspoon cornstarch in a tablespoon of water.
Cooking
- Heat a skillet over medium-high heat and add a little olive oil.
- Add chicken cutlets and cook for a few minutes per side until golden and cooked through.
- Remove chicken from the pan and set on a plate.
- Lower the heat and add minced garlic to the same pan, stirring for about 20-30 seconds.
- Pour in the honey mixture and let it bubble, adding butter if using.
- If using cornstarch slurry, whisk it into the sauce and simmer until glossy.
- Return the chicken to the pan and spoon the sauce over it for a minute or two.
- Garnish with green onions or sesame seeds if desired.
Notes
Chicken should reach an internal temperature of 165°F (75°C). For meal prep, store chicken and sauce together to keep moist. Reheat gently.
