Sauce Ingredients

  • 1 tablespoon olive oil For cooking and flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into even 1-inch cubes.
  3. Place the sweet potatoes on a baking sheet spread out to avoid steaming.
  4. In a small bowl, mix together the honey, minced garlic, soy sauce, olive oil, salt, and pepper.
Cooking
  1. Place the chicken breasts on the baking sheet alongside the sweet potatoes.
  2. Brush half of the honey garlic mixture on top of the chicken.
  3. Roast everything in the oven for about 25-30 minutes or until the chicken is opaque and the sweet potatoes are fork-tender.
  4. Drizzle the remaining honey-garlic mixture over everything before serving.
  5. Garnish with chopped green onions if desired.

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15 minutes. Consider marinating chicken in the sauce overnight for enhanced flavor.
