Method
Marinate the Chicken
- In a mixing bowl, combine olive oil, minced garlic, oregano, parsley, paprika, lemon juice, salt, and pepper. Coat the chicken breasts well, allowing them to marinate for at least 30 minutes.
Prepare the Fries
- Preheat your oven to 425°F (220°C). Toss the cut fries in vegetable oil with a pinch of salt. Spread them evenly on a baking sheet.
- Bake for 30–35 minutes, flipping halfway through, until golden and crispy.
Grill the Chicken
- Heat your grill or grill pan over medium-high heat and grill the marinated chicken breasts for 5–6 minutes on each side until charred and cooked through.
Make the Salad & Dressing
- Assemble the salad with romaine, cucumber, tomatoes, and red onion on a serving platter. Mix mayonnaise, lemon juice, garlic powder, salt, and pepper in a small bowl for the dressing.
Assemble and Serve
- Arrange the grilled chicken next to the fries and salad. Drizzle the dressing on the side.
Notes
For dietary needs, substitute olive oil with avocado oil. For a vegetarian version, replace chicken with marinated tofu. Pair with lemonade or white wine.
