Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix softened butter with finely chopped fresh herbs and minced garlic.
- Coat the chicken drumsticks generously with the herb butter mixture, seasoning with salt and pepper to taste.
- Place the drumsticks on a baking sheet and roast for 35-40 minutes, until golden brown and the internal temperature reaches 165°F (75°C).
- While the chicken is roasting, peel and chop the potatoes. Boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and mash them with the milk or cream, adding salt to taste.
- Slice the carrots and cook them in a pan with a little water until tender. Add honey or brown sugar to glaze them.
- Serve the roasted chicken drumsticks alongside the creamy mashed potatoes and glazed carrots.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm in the oven at 350°F (180°C). For extra crispy skin, broil the chicken for a few minutes at the end.
