Ingredients
  

For the Chicken
  • 8 pieces Chicken drumsticks Use skin-on drumsticks for better flavor.
  • 1/2 cup Butter Softened for mixing.
  • 1/4 cup Fresh herbs (rosemary, thyme, parsley) Finely chopped.
  • 3 cloves Garlic Minced.
  • to taste Seasoning (salt and pepper) Add to enhance flavor.
For the Sides
  • 4 medium Potatoes Peeled and chopped.
  • 1/2 cup Milk or cream For creamy mashed potatoes.
  • 3 medium Carrots Sliced for glazing.
  • 2 tablespoons Honey or brown sugar For glazing carrots.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix softened butter with finely chopped fresh herbs and minced garlic.
  3. Coat the chicken drumsticks generously with the herb butter mixture, seasoning with salt and pepper to taste.
  4. Place the drumsticks on a baking sheet and roast for 35-40 minutes, until golden brown and the internal temperature reaches 165°F (75°C).
  5. While the chicken is roasting, peel and chop the potatoes. Boil them in salted water until tender, about 15 minutes.
  6. Drain the potatoes and mash them with the milk or cream, adding salt to taste.
  7. Slice the carrots and cook them in a pan with a little water until tender. Add honey or brown sugar to glaze them.
  8. Serve the roasted chicken drumsticks alongside the creamy mashed potatoes and glazed carrots.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm in the oven at 350°F (180°C). For extra crispy skin, broil the chicken for a few minutes at the end.
