Preparation
  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Cook, stirring often, until the vegetables are softened and slightly golden.
  2. Stir in garlic and cook for an additional minute.
  3. Add cumin, smoked paprika, and tomato paste, stirring until fragrant.
  4. Add rinsed lentils and broth to the pot. Bring to a boil, then reduce heat to a gentle simmer.
  5. Cook for 25-35 minutes or until lentils are tender. Check and taste regularly.
  6. Season with salt and pepper, adjusting to taste.
  7. Let the soup sit off the heat for 10 minutes before serving.

Notes

Offering variations such as Coconut Curry Comfort or Smoky Paprika and Greens can add diversity. Serve with crusty bread or a side salad for a complete meal.
