  • 1 lb chicken thighs Thighs stay juicy, breasts can also be used
  • 1/2 cup Greek yogurt Plain yogurt can be used if Greek yogurt is unavailable
  • 2 tbsp olive oil For richness
  • 1 tbsp lemon juice Brightens the flavor
  • 4 cloves garlic, minced Don't be shy with the garlic
  • 1 tbsp oregano Key for flavor
  • 1 tsp paprika Adds warmth and color
  • 1 tsp cumin Optional, but recommended
  • 1 tsp salt To taste
  • 1/2 tsp pepper To taste

Method
 

Preparation
  1. In a medium bowl, stir together Greek yogurt, olive oil, lemon juice, minced garlic, oregano, paprika, cumin (if using), salt, and pepper.
  2. Toss the chicken in the bowl until it's well coated.
  3. Cover the bowl and place it in the fridge to marinate for at least 30 minutes (longer is better).
Cooking
  1. Preheat your grill, oven, or skillet for cooking.
  2. Cook the marinated chicken using your preferred method: grill, bake at 425°F (20-25 mins for thighs, 18-22 mins for breasts), or sauté in a hot skillet (5-7 mins per side).
  3. Let the chicken rest for a few minutes, then slice thinly.

Notes

Marinating the chicken for 4 - 12 hours yields the best flavor, and leftovers are great in salads or wraps. For a cozy meal, serve with a chopped salad or tzatziki.
