Grilled Teriyaki Chicken

Ingredients
  

For the Marinade
  • 1 cup Soy sauce Low sodium recommended
  • 1/2 cup Brown sugar or honey To taste
  • 2 cloves Garlic Fresh minced preferred
  • 1 tbsp Fresh ginger Or a small shake of ground ginger
  • 2 tbsp Rice vinegar or lime juice For acidity
  • 1 tbsp Sesame oil Optional, adds flavor
For the Chicken
  • 4 pieces Boneless, skinless chicken thighs or breasts Use breasts for a lighter option
For Topping
  • 2 tbsp Green onions Chopped
  • 1 tbsp Sesame seeds To sprinkle on top

Method
 

Preparation
  1. In a bowl or measuring cup, stir together soy sauce, brown sugar, garlic, ginger, and rice vinegar. Optionally add sesame oil.
  2. Place chicken in a zip top bag or shallow dish and pour marinade over it. Marinate for at least 30 minutes, preferably 2 to 6 hours.
Grilling
  1. Preheat grill to medium heat and oil the grates lightly.
  2. Grill thighs for 5 to 7 minutes per side, or breasts for 4 to 6 minutes per side, until chicken reaches 165°F (74°C).
  3. Let grilled chicken rest for 5 minutes before slicing.
  4. Top with chopped green onions and sesame seeds before serving.

Notes

To prevent chicken from sticking, clean and oil the grill grates. For serving, consider pairing with cucumber salad or steamed rice. Use leftovers for rice bowls or wraps.
