Ingredients
  

For the Fries
  • 4 large potatoes 4 large potatoes, cut into fries Russets recommended for crispy fries.
  • 1 tbsp 1 tbsp vegetable oil
  • 1 tsp 1 tsp paprika
  • 1 tsp 1 tsp garlic powder
  • Salt to taste Salt, to taste
For the Potato Salad
  • 4 medium potatoes 4 medium potatoes, boiled and diced Use waxy types like Yukon Gold.
  • 3 hard-boiled eggs 3 hard-boiled eggs, chopped
  • 1/2 cup 1/2 cup mayonnaise Greek yogurt can be substituted.
  • 2 tbsp 2 tbsp sour cream
  • 2 tbsp 2 tbsp chopped pickles
  • 1 tbsp 1 tbsp mustard
  • 2 green onions 2 green onions, sliced
For the Sausages and Garnish
  • 4 pieces 4 grilled beef or pork sausages Look for fresh, high-quality sausages.
  • 1 tbsp 1 tbsp olive oil For brushing on sausages.
  • 1 cup 1 cup cherry tomatoes, halved
  • 1 tbsp 1 tbsp fresh parsley, chopped For garnish.

Method
 

Preparation of the Fries
  1. Preheat your oven or air fryer to 425°F (220°C).
  2. Toss the sliced potatoes in a bowl with vegetable oil, paprika, garlic powder, and salt.
  3. Spread them on a baking sheet and bake until golden and crispy, about 25-30 minutes.
Making the Potato Salad
  1. In a large bowl, combine the boiled, diced potatoes with chopped hard-boiled eggs, mayonnaise, sour cream, chopped pickles, mustard, green onions, and seasoning.
  2. Mix gently to maintain the texture, then chill in the refrigerator until serving.
Grilling the Sausages
  1. Brush each sausage with olive oil to prevent sticking and place them on a preheated grill.
  2. Cook until browned with dark grill marks, turning occasionally for about 6-8 minutes.
Preparation of the Tomatoes
  1. In a small bowl, toss halved cherry tomatoes with a pinch of salt and chopped parsley.
Assembling the Plate
  1. Artfully arrange the grilled sausages, crispy fries, creamy potato salad, and seasoned cherry tomatoes on a serving platter.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze the sausages and potato salad separately for up to 2 months.
