  • 4 large large potatoes, cut into fries Russets are perfect for fries, yielding crispy edges and fluffy interiors.
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tsp salt
For the Sausages
  • 6 smoked sausages Look for sausages with natural casings and a blend of spices.
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
For the Egg Salad
  • 6 hard-boiled eggs, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup mayonnaise For a dairy-free version, substitute with avocado.
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped parsley
  • Salt and black pepper to taste
For Garnish
  • Chopped parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) for the fries.
  2. Toss the cut potatoes with vegetable oil, paprika, garlic powder, and salt. Ensure the fries glisten.
  3. Spread the potatoes in a single layer on a baking sheet and bake for 30-35 minutes until golden brown and crispy.
Egg Salad
  1. While the fries are baking, mix the chopped hard-boiled eggs, halved cherry tomatoes, mayonnaise, Dijon mustard, parsley, salt, and pepper in a bowl.
  2. Stir gently to ensure a creamy yet chunky texture.
Sausage Preparation
  1. Brush the sausages with olive oil, then sprinkle garlic powder, paprika, and black pepper evenly over them.
  2. Let the sausages sit for a few minutes to absorb the spices.
Grilling
  1. Place the sausages on a grill over medium heat.
  2. Grill for about 8-10 minutes, turning occasionally, until browned and grill marks are visible.
Assembly
  1. Once everything is ready, arrange the grilled sausages, seasoned fries, and creamy egg salad on a platter.
