Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Try to pick ones that are close in size.
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 1 teaspoon kosher salt Season generously.
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Can substitute with chili powder.
  • 1 teaspoon Italian seasoning Can substitute with dried oregano.
  • 1 tablespoon lemon juice For brightness in flavor.

Method

Preparation
  1. Preheat the grill to medium high.
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil and season on both sides with salt, pepper, garlic powder, paprika, and Italian seasoning. Add a squeeze of lemon.
Cooking
  1. Place the chicken on the grill and close the lid.
  2. Cook for about 5 to 7 minutes on the first side.
  3. Flip the chicken and cook for another 4 to 6 minutes, checking the temperature.
  4. Remove the chicken when it reaches an internal temperature of 165°F in the thickest part.
  5. Rest the chicken for 5 to 10 minutes before slicing.

Notes

Resting the chicken is important to keep it juicy. If the chicken breasts are very large, consider splitting them in half horizontally or pound them to an even thickness for consistent cooking. And always ensure to season generously.
